Lucknow ,Nawabs and Biryani.

How the word Biryani instantly reminds us of Nawabs? May be the richness of flavours and aroma of Biryani brings a nawabi feeling in us.

I researched alot on this completely satisfying and delicious dish and find out that its not nawabs who invent this delicacy but it was the poor army who fed on this first as due to lack of sufficient supplies soldiers were fed the mix of meat and rice together it was more like yakhni pillaf or pullau.

Later these soldiers of arab/ persian army took this pullao with them to India.Where it got modified by adding aromatic spices and best of rice available there.

From 1500 century till date Biryani now evolved from army camps to mughal courts to every muslim kitchen. Now chefs even developed veg and diet versions of Biryani.

Biryani is now cook in easy steps boiling rice preparing meaty layers and gravy then assembling both with adding food colours ,saffron and other aromatic spices and then put on "dum".

Biryani  is the must in any of our big gatherings both happy and sad events .
We celebrate our happinesss with our Biryani so as we console our souls with our Biryani too.

Life is tasteless if Biryani is missing from our cusine.
